ZUCCHINI CORN MEAL MUFFINS

grease tins

12 large muffins

425° for 30 minutes

12 ounces zucchini, shredded, sprinkled with ½ teaspoon salt and drained

Sift together

11/4 cups flour
3/4 cup corn meal
1 tablespoon baking powder
a pinch of cayenne

Beat together

3/4 cup buttermilk
3 tablespoons vegetable oil
1 egg

Mix wet and dry ingredients then stir in zucchini and

½ cup shredded sharp cheddar cheese

1 large green onion, finely chopped
