VARIOUS BAR COOKIE – A.K.A. BROWNIE – RECIPES
BROWNIES / GRAMMA KATH'S CHOCOLATE CHEWS / SESAME SEED BARS / JACKIE URBAN'S TEXAS BROWNIES / JACKIE URBAN'S LEMON SUNSHINES / Gumdrop Bars / Zucchini Brownies (see Eggless Desserts)
Preheat oven to 350 degrees 9 “ square pan, greased, 30 minutes
Melt ¼ cup butter.
Stir in:
¼ cup vegetable oil
1/3 cup sifted baking cocoa
1 cup sugar
2 eggs
Sift together:
¾ cup all purpose flour
½ teaspoon each salt and baking powder
Stir dry ingredients into chocolate mixture, just until blended.
Add:
½ cup chocolate chips
½ cup chopped nuts
Grease a 9” square pan. Spread batter evenly and bake 30 minutes, or just until firm but not hard or dry.
Preheat oven to 350 degrees. 9” square pan, greased, 20 minutes
Mix together:
1 cup sugar
2/3 cup vegetable oil
6 tablespoons (1/3 cup plus 1 tablespoon) cocoa powder
1 cup flour sifted with ½ teaspoon salt, ½ teraspoon baking powder
1 teaspoon vanilla
2 eggs
Bake in a greased 9” square pan at 350 degrees for 20
minutes or until they bounce back when lightly touched.
Frost with a vanilla confectioner’s sugar frosting and drizzle with
melted chocolate chips.
Or use the following mint and chocolate frosting combination:
Mint Cream for 9” square
1 cup confectioners’ sugar
1/4 cup margarine
1 Tablespoon water
¾ teaspoon mint extract
few drops green food coloring (optional)
Mix all ingredients until smooth.
Spread on
Cover and chill.
Chocolate Topping
3 Tablespoons margarine, 1/2 cup chocolate chips. Melt together, stir until smooth. Cool slightly before pouring over Mint Cream.
Pour Chocolate Topping over Mint Cream, cover and chill.
Preheat oven to 375 degrees 9 “ square pan, greased, 25 minutes
In this recipe, use the saucepan in which you toast the sesame seeds to melt the margarine and then as your mixing bowl as well.
½ cup sesame seeds ½ cup margarine 1 ¼ cups sifted flour 1 teaspoon baking powder
½ teaspoon salt 1 cup brown sugar, packed 2 eggs 1 teaspoon vanilla
Toast: ½ cup sesame seeds in a medium sized saucepan over very low heat, stirring until the seeds are light brown and fragrant. Remove from heat. Measure and remove one Tablespoon of toasted seeds for garnish. Add margarine to hot seeds and stir to melt. Beat brown sugar, eggs & vanilla into sesame mixture. Sift and add flour, baking powder and salt and stir to thoroughly combine.
Spread batter in a greased 9” square pan. And bake at 375 degrees for 25 minutes, or until bars test done. Cool in pan on rack. Frost with honey frosting and sprinkle reserved 1 Tablespoon toasted sesame seeds over top.
Honey Frosting
2 tablespoons each butter and honey. Whip together then beat in 1 ½ cup sifted confectioners’ sugar and
1 Tablespoon milk.
400 degree oven, 20 minutes
Cake part:
2 cups flour
2 cups sugar
½ cup margarine
½ cup shortening
1 cup coffee or water ¼ cup cocoa
½ cup milk + 2 teaspoons vinegar
2 eggs
1 teaspoon baking soda
1 teaspoon vanilla
Frosting:
½ cup margarine
2 Tablespoons cocoa
¼ cup milk
1 teaspoon vanilla
3 ½ cups un-sifted confectioners’ sugar
In a large mixer bowl combine flour and sugar.
In a heavy saucepan, combine margarine, shortening, coffee or water and cocoa powder. Stir together and bring to a boil. Pour boiling mixture over flour & sugar. Add milk, eggs, vanilla, and baking soda. Mix well. Pour into well greased jelly roll pan.
Bake at 400 degrees for 20 minutes.
Meanwhile, prepare frosting ingredients: Combine and bring to a boil, margarine, cocoa powder and milk . Mix in the confectioners’ sugar and vanilla and beat until smooth. As soon as cake comes out of the oven, pour the frosting over the hot cake. Cool and cut into 48 bars.
JACKIE URBAN’S LEMON SUNSHINES
9” square pan, 350 degrees, twice
In baking pan, rub together :
3/4 cup margarine
1/3 cup confectioners’ sugar
1 ½ cup flour
Pat evenly onto bottom of pan and bake 20 minutes.
Meanwhile, mix together:
3 eggs
1
½ cups sugar
juice
of 1 lemon (at least ¼ cup)
Pour filling mixture over baked crust. Bake 20 minutes. Remove from oven. Loosen sides. Sprinkle with confectioners’ sugar. Chill thoroughly before serving.
