PUMPKIN CHOCOLATE CHIP BARS

 

Preheat oven to 375˚

 

For a single batch. grease, line with waxed paper and grease again a medium sized jelly roll pan.  A double batch fits in a large jelly roll pan.

 

Stir together in mixing bowl:

1 cup cooked, pureed pumpkin

1 teaspoon vanilla

1 cup sugar

¼ cup vegetable oil

1 egg

 

Sift together, then stir into pumpkin mixture until well blended:

2 cups flour

2 teaspoons baking powder

1 teaspoon ground cinnamon

½ teaspoon @ ground ginger, salt

 

Stir in 1 cup chocolate chips, preferably mini chips.  Pour into greased pan.  Bake 10-12 minutes, or until the center springs back when touched lightly.  Cool on a wire rack and cut into bars.  May also be baked as drop cookies on a greased cookie sheet.
