Gladys Dyer’s Pickled
Beets
Gladys Dyer cooked and kept house for Richard and Dorothy Waterman in Waldoboro, ME, for many years.
We are very
fond of her pickled beets recipe, which is very easy to make.
½ cup vinegar
1/3 cup sugar
a few shakes of cinnamon
Bring the vinegar, sugar and cinnamon to a boil.
Cover cooked, sliced beets with
vinegar mixture.
Let set 2-3 days before eating.
Will stay well indefinitely if refrigerated or put warm pint jars in boiling water bath for 10 minutes.
