Oatmeal Meatloaf
This recipe came from the back of the Quaker Oats
box we bought in Ann Arbor. I adapted it a little by using a blender to
make it acceptable to you kids -- no little lumps of egg goo or onions
in the finished product! 1 1/2 pounds ground meat 1 cup tomato juice, sauce, or canned tomatoes in
juice 3/4 cup dry oatmeal 1 egg 1 medium onion, cut in chunks Salt, pepper, parsley to taste. Use the blender to liquefy the onion, egg and
tomato. Mix with meat and oatmeal. Add salt & ground pepper and chopped
parsley. Pat into a loaf pan -- or into appropriate smaller dishes, for
individual portions, and bake at 350 degrees for about an hour, until
nicely browned. Allow to stand 5 minutes out of the oven before
serving. |
