New York Cheesecake
1 3/4 c. graham cracker crumbs
2 eggs
1/2 c. melted butter
1 tsp. vanilla
1 c. sugar 2 Tbsp. cornstarch
2 lb. cream cheese
1 c. sour cream
Preheat oven to 425o. In a bowl, combine graham cracker crumbs, butter, and 2 Tbsp. sugar, blend well. Press mixture onto bottom and sides of a greased 9" springform pan (or use 2 8" pie pans). Chill in freezer while preparing filling. In mixer bowl, beat cream cheese and remaining sugar until smooth and light. Beat in eggs, vanilla, and cornstarch, until blended. Stir in sour cream. Pour mixture into crust and bake 10 minutes. Reduce temperature to 200o and bake 45 minutes. Turn off oven and allow to cool in the ovenwith door slightly open for 1 to 3 hours. (Top with fruit pie filling if desired.) Chill overnight.
