Auntie Toni's recipe, modified. I usually double
this, make 2 and use the second one for breakfasts. Preheat oven to 350 degrees. Grease 8 or 9 inch round pan. You can line the
bottom with waxed paper to ensure that it comes out OK. Sift together: 2 cups flour 1/4 cup sugar 2 teaspoons baking powder Cut in 1 stick butter, about the way you would cut
the fat into pie crust. Add 6 ounces dried currants & toss to disperse
evenly. Beat together 2 eggs and 1/2 cup milk. Stir into dry
ingredients until moistened. Mixture will still be lumpy, do not try to
overbeat it or make it smooth. It will be wet and sticky. Spread into greased pan. Bake at 350 degrees until golden brown. Serve warm |
