Five Bean Salad

 

Drain a variety of canned beans; e.g., dark red kidney beans, light red kidney beans, black (Mexican) beans, black eye peas, and field beans. You could also use string beans.

Mix these beans together in a large bowl and add one large raw onion, finely chopped.

Add chopped fresh parsley to taste.

Add olive oil and wine vinegar to taste.

Add pepper and salt to taste.
