Garlicky Cucumber Salad

 

Peel and remove seeds from two large cucumbers. Cut into ¼ inch dice.

Mince & add two cloves fresh garlic.

Chop & add mint and/ or dill to taste.

Stir in about a cup of sour cream or plain yogurt or a combination of the two.

Season to taste with salt & pepper and serve chilled.

 

Use twice as much yogurt & serve as a cold cucumber soup.
