Standard Corn Bread Yields one square 8 or 9 inch pan or 1 dozen muffins Preheat oven to 400 degrees Grease pan or line muffin cups with cupcake papers
Sift together: 1 cup flour 1 cup corn meal ½ to 1 teaspoon salt 4 teaspoons baking powder 2 Tablespoons sugar
Beat in: ¼ cup soft butter, margarine or shortening 1-2 eggs 1 cup milk (or 1/3 cup dry milk & 1 cup water)
Beat until just smooth – about 50 strokes with a wire whisk. Turn into greased pan and bake about 20 minutes, until golden brown around the edges & testing done in the center.
