Zucchini (or Cucumber) Relish
10 cups ground zuccchini (or cucumber)
4 cups ground onions
5 tblsp salt
Soak overnight. Drain. Rinse. Drain.
Add:
2 1/4 cups white vinegar
4 1/2 cups sugar (We use a bit less.)
1 tblsp each of nutmeg, dry mustard, tumeric and cornstarch
2 tsp celery seed
1 tsp mustard seed
1/2 tsp ground pepper
2 sweet green peppers chopped fine
Bring to a boil and simmer for 1/2 hour or until thick
enough.
10 min. in waterbath.
