CRESPELLE ALLA FIORENTINA
1pound fresh or frozen spinach, cleaned. Cool lightly with a little olive
oil and garlic. Drain of all liquid and mince. Cool slightly. Add a pound
of ricotta cheese (fat free is fine), 2 eggs, salt, pepper, a pinch of
nutmeg and 1/4 cup Parmesan cheese.
